Hy-Vee Tailgate Tips: Pork Green Chili

Midco Sports Network and the seven Sioux Falls Hy-Vee Stores have teamed up to provide Hy-Vee Tailgate Tips throughout the 2015-2016 sports season.  During every home SDSU and USD broadcast, on Midco SN, a Sioux Falls area Hy-Vee Chef will prepare something you can create for your guests when you watch the game.

This recipe is perfect for those cooler football game days. Try this recipe over bean and beef or breakfast burritos or just eat it as a stew with warm tortillas. 


Pork Green Chili

  • 2 pounds ground pork
  • 1 cup diced onion
  • 4 cloves garlic
  • 3 chopped jalapeno
  • 2 hatch chilies
  • 3 serrano peppers
  • 6 tomatillo
  • 1 tablespoon cumin
  • 4 cups chicken stock
  • 2 cans white beans

Brown sausage, onion and garlic. Rough chop peppers and place under broiler until slightly charred. Then puree in a blender until smooth.

Pour into meat mixture along with beans and stock, and simmer on low heat for 1 hour.
